Bi-Rite Market Mama's Roasted Carrots with Tahini, Lemon, and Parsley

This recipe is adapted from my mother, who learned it from her mother. Tender, organic carrots are roasted to bring out their sweetness, then tossed in a delicious dressing made with tahini, lemon juice, garlic, and lots of Italian parsley. This dish is wonderful served on its own as an appetizer course, or served as a side to your main dish. Best served at room temperature.  -Sam M

1 Pound Serves 3 to 4 Guests

Place veggies in a shallow casserole dish and roast at 350°F until hot, roughly 15-20 minutes.

Heat on high for 3-5 minutes, or until heated through. Stop and stir every sixty seconds to ensure even heating.
